My wife is from Wisconsin... Our first New Year's together, she asked if we were going to celebrate with Cannibal Sandwiches. I thought she was kidding when she described it. Raw hamburger, onions on rye bread. To be fair, it seems to be a Polish Wisconsin thing, mostly wedding receptions and New years.

We always stock up on cheese curds when we visit her family and bring back plenty for family and friends.

The butchers here set aside some stuff they handle carefully just for the cannibals. I wouldn't try it with just any ground beef.

On the polka records I'd heard as a kid, yeah. But when I'd see polka bands at a bar in new glarus, or at the come back, there was a lot more to it. Jazzier, like big band. More dynamics, clarinet solos, heavy driving accordion bass, and then there's that polkabilly goose island ramblers stuff. I actually got into conjunto first, when I was trying to play bajo sexto, and it led me to my own back yard. If you get past roll out the barrels, there's more going on.
There's a show on 98.7 I'm hoping to get time to listen to soon;
my long running garagepunk band the arkoffs did this: "Polka Queen"
it's more in the satire vein

And...

I was driving to the shops the other day and a modern Vespa style scooter drove in front of me with 4 kids in ski masks on it.
They then went off road, up a footpath/cycle-path.

Beyond cheese, the state exports a staggering amount of food and food related same time it is a huge exporter of toilets and toilet paper.
The USDA says California exports the most food. Nebraska is the top dairy supplier

honestly i don't think I've ever seen spotted cow in a can before

I had only seen it or had it from a bottle until recently. I was talking to a guy I don’t see often at work a while back and found out he was from Wisconsin. I brought up the spotted cow thing and he said man I go back home every couple months and got cases of that in my basement. Asked if I wanted to buy a couple cases, he’s the one that brought it to me in cans which was a first. End of the day it’s good either way, cans or bottles. I bet it’s really good on tap.

Where did you get the idea that Nebraska is the top dairy supplier??? Even the Nebraska Dairy Association says that Nebraska is 10th in the nation in milk production per cow. And if they're 10th per cow, they sure as heck are not the number one dairy supplier. Reread the information from the link that you posted. California is the top dairy producer. Wisconsin used to be, long ago.

So the boys and I met over the weekend at a pizza arcade we used to frequent when they were kids.
It was recently bought out by a Boston couple, and they tried to pass off mozzerella sticks as cheese curds 😆😆
