Pretty much all south Asian cooking uses it. Modern cooks are branching out: https://www.bonappetit.com/recipes/slideshow/fish-sauce-recipes

    It’s also generally not vegetarian.

What would you replace it with? Mushroom-flavoured soya sauce?

Nuff said, think I’ll stay away from that.

The line will hold! Stand firm!

speaking of I just picked up sweet vermouth so when Jeanette gets back I’m going to have her check out perfect in place of dirty.

I grew up with French's, which may have been the only brand available where we lived. I don't know, but in any event it was fine and gave me a life long love of the stuff. I made the switch to L&P decades ago. We use a lot of Worcestershire, probably 2-3 big bottles a year.

Sure. That may taste really good.

It’s not hard to get that sauce without fish in it. And it tastes pretty similar.

when I drive in traffic, invariably I see someone sniffing a finger, I'd bet that it is a funky smell that they just cant NOT sniff.

That's my problem: I don't cook enough South Asian (pacific) dishes. I feel like such a hack, a fake, a bon vinant (of ill repute) when I make an attempt.

That's one flavor in Thai cooking that I never warmed up to, and I know why. On my first night in Bangkok I passed by a dude who was throwing up on the sidewalk, and that was the predominant odor filling the air.

I can only take it in small doses. There's a bottle in the back of my refrigerator, somewhere.

One night in Edinburgh I was doing a pub crawl with friends. Outside one pub were had a surreal encounter with a very drunk Scot. We couldn't understand anything he was saying but he went on and on, in a loud voice. He disappeared but we found him a few minutes later, around the corner just as he unleashed vomit like a fire hose onto the bonnet of a car. Ever since then, I associate a thick Scottish accent with projectile vomiting.

L&P makes anything savoury taste better.
It's like bacon in a bottle.

Fish sauce goes in gumbo. I wouldn't use Asian fish sauce though.

A teaspoon or two of Lea & Perrins might lift the flavours a bit.

    Worcester sauce? Absolutely no, never.

Now this on the other hand is the condiment of the gods....

Ladies and Gentlemen, this is Sheffield's finest. Our gift to the World. Enjoy.
