This is a great thread topic!
I'll submit two of many: the intro drum count and G chord downbeat--not to mention the surprise "cold" ending---in Merle's live version of Running Kind/I'm A Lonesome Fugitive, on the "Rainbow Stew:Live at Anaheim Stadium" album. That entire track gives me chills every time, and has for forty years.

And one I've mentioned before...the little 10 note piano lick Lennon plays towards the end of O Bla Di O Bla Da never fails to make me smile.
