What's your pizza topping?

    Any and everything but sardines. Just had a pineapple and Canadian bacon pizza the other day, l'd forgotten how great that is.

    I don't really have a "go to" topping, but one of my current favorites is green pepper and bacon.

    And now I want one.....

    I made pizza last night, and confirmed something I've known but haven't tried for a long time. And that is, that general purpose bleached and bromated flour is totally inappropriate for pizza crust. It can be made to handle well enough, but even a 30 hour slow rise can't fix the flavor.

    Sliced Meatballs..not ground up meatballs, not little "Chef" style meatballs, a big honkin' homemade ball sliced thin and laid on top like pepperoni. Failing that (seems to mostly a Jersey thing) pepperoni, or just a plain tomato pie .

    I like the Cream and Crimson (from Aver's if anyone is lucky enough to find themselves in Bloomington) but I really like the Woodsman from Lenny' s (Pesto sauce, portobello and button mushrooms, sun-dried tomatoes and goat cheese).

    Pesto, sun-dried tomatoes and chevre? I'd sell my soul to the devil for that pizza!

    Love pepperoni but generally don't eat pork anymore. So I usually go with some combination of mushrooms, black olives, jalapenos and red onions.

    I do also like a good pizza margheritta. (sp?)

    You must have really sweet sauce in Canuckistan. The acid in the tomato and pineapple clash.

    I'm hit or miss on pineapple. I used to detest it on pizza, but I've gotten to the point I'll eat it and (sometimes) enjoy it. But I never order it.

    You need All- Trumps bleached/bromated for the perfect NY crust. Hydration in the mid to upper 50's. 6 hour ferment, tops. You're not making bread.
