If someone asks you this, what is your immediate reaction?
Mongolian throat singer covers.
To that question, I always reply "I play a Telecaster."
"I play Telecaster music."
i say...i make noise
I tell them....I play a telecaster that I put together myself...out of wood from the scrapyard....
that interests even non musicians....
Electric and non-electric
I pause and then people say," ...or what DON'T you play?"
I can play a bit of everything. Except brass horn instruments. I always found the lip tension and valve thing a bit baffling.
Instrument. But I'd comment that it would depend on what sort of music I'm attempting to learn as to which guitar, bass, harmonica, or kazoo I was playing
If that's not enough, I move on to Rhythm guitar. If they're still curious I tell I say my favorite thing is instrumental hard rock that's a cross of surf, punk & metal.
Music and music badly. More of the latter.

The survey is about about form and function in an oblique way. My reaction is basically a genre.
I always immediately respond with, "blues".
My usual response is "Any old rubbish I can get away with." But I do play (and sing) any old rubbish as well as I possibly can.
^^^^ You're referring to music though, not the instrument? In my case "any old rubbish" would apply to the instrument, I'm picky about the music.
The poll divides into whether you think first of the music or the instrument. I can imagine a band or orchestra musician saying that he plays, say, the trumpet, but for most popular music, I would have thought that the first reaction would be genre or style. - Function before form if you like.
I see what you're getting at. But my response presupposes that the questioner already knows I'm a guitarist and singer. I mean, why go up to someone and ask "What do you play?" if you have no idea even whether they're some kind of musician or not?
So in my experience the question usually refers to genre, and the mostly humorous response I quoted alludes to the pretty wide range of styles I get called upon (or choose) to perform.
^^^^ You're right, I was assuming and should have mentioned that the question was in a guitarist or context - You mention in passing, maybe, that you play the guitar.
My own stuff as I'm incapable of playing anything else.
