    The makings of chicken and wild rice casserole.

    Almost All in one pot.

    Sauteed, onion, garlic, celery, bok-choy stems (with a few green leaves), and mushrooms. Got to sweat it all down.

    While that is going cook 2 boxes of Uncle Ben's

    Add 2 cans of evap milk, and 2 cans cream of chicken soup to veggies.

    Turn heat down really low and then pull the chicken.

    Add cooked rice and chicken and stir it up.

    Bake in 400° Oven; covered, for about 40 minutes until its bubbling.

    Then add mozzarella and bake uncovered for another 10 minutes

    Not dinner, but brunch,brunch, eggs Benedict

    Holandaise sauce is whipped yokes, melt butter (ghee, clarified butter) and a bit of lemon juice.

    Poached eggs: put plastic wrap over a glass, crack one egg into it, and close to make a closed bag. Drop eggs into boiling water, for 4 minutes.

    Prepare a toast with butter, I used cheese too. Add ham, arugula, and then the poached egg, the sauce, and some fresh pepper.

    Sorry, no pix. I have no way to host them and we were too busy eating

    We call it “Stuffed Avocado”

    2 ripe but not too ripe avocados
    1 pkg fake crab meat shredded
    6 cooked shrimp (chopped)
    2 diced stalks celery
    1 small onion diced
    Mayonnaise and zesty vinegar & oil. Enough to dress the mixture but not drown it. Sorry but we wing this
    Garlic powder, black pepper, red pepper flakes, a pinch of salt, & a small squeeze of lemon juice.

    Halve the avocados & remove the pit
    Fill the avocados with the mixture & serve cold

    Very filling & reasonably healthy

    I made a loaf of almond bread yesterday (gluten free), so today I made grilled cheese. It's the first grilled cheese I've had in 8 years or so.

    Well, actually, I had two since the loaf was small. On the second one I added pickled hot pepper rings. Yum.

    Pho broth (riffing on a theme):
    Beef Bones and ox tails with salt and garlic powder...

    Onion, garlic, ginger and a split jolapeno; salted.

    Roasted in oven for approx 40 minutes at 400°.

    Roasted spices I got from Oriental market for a minute or two then bagged them up with the bag they came with

    Put them it all in my big new stock pot with 2-1/2 gallons of water a stalk of bok choy and a sprig of rosemary from my bush in the back yard.

    Add kosher salt and brown sugar.

    Simmer over night on very low.
