Those look great, but is the cheese necessary?
Apparently not. Nobody could taste the cheese. I think the 300°F caused the cheese to just melt away.

Everybody liked them (smoked bacon? What's not to love?)...but I thought they needed something. Certainly you could add chiles...but thats been done to death.

Maybe a dip in some queso? A grating of asiago? Siracha? They were great dipped in guac.
