I grew up knowing the sweet potato in the traditional US Thanksgiving time recipes but learned to love them from travel and international associates. Later I met a scientist who dedicated most of his career to the plant and aiding farmers in poor areas to grow them and things with great nutritional value. I love them in so many ways. Simply baked and smashed a bit with some oil, yogurt and citrus or in complex seasoned recipes. Last night was heaven to have them with seasoned chickpeas, fresh greens, rice and a sauce with gochujang (Korean ketchup?). The sweet potato with Caribbean flavorings are also great. There's no doubt here the talk of them as a super food is correct because I like the way they power some of the endurance things I do. I do eat meat but love a day before event meal heavy on them and legumes.
