Tom Petty.
Linda Ronstadt.
Joni Mitchell.
SRV.
Freddie King
Eagles
Allman Bros.

I think I did see the Eagles early on in their career, but would have liked to see them after some of their better albums.

I saw Hendrix 3 times! It was mostly loud and showy. Definitely not as good as the albums, but it was impactful like the start of Foxy Lady etc!
@schmee my top 2 are Petty and the Heartbreakers, and SRV.

John Prine I only discovered WHEN he died :(
Don't you just hate it when that happens!?

And he in turn led me on to discover even more dead guys: Blaze Foley, Townes Van Zandt, Jim Croce - Music I didn't think I much liked before; Prine was my gateway drug!
Jim Croce I knew growing up, but the other two yeah, about the same time as Prine. In fact, Blaze Foley – amazing songwriting! – from Prine:

Larry Norman when he was performing in Drachten (the Netherlands)
he got his heart attack after that ore at the performance.

In the early '70s he came to Toronto often. I caught him at two concerts. One of them was at a drop-in, in a small church basement.

Two artists I would like to have seen were Miles Davis, and Jeff Beck.

Heh. Yes that's the very same clip when I share my 'discovery' with other guitar playing friends. John Prine and that little circle don't seem to have gotten much notice on this side of the atlantic, well not to my ears.

Likewise Elliott Smith... Hmm!
Now I'm thinking maybe he's the One musician I wish I'd seen.

There's just too many... what sort of a thread is this?!

I am grateful I got to see lots of great music through the '70s and 80s. Hard to pick one; here's some I wish I'd seen:

Beatles
Hendrix
Pink Floyd
Led Zep

Hendrix, Parker, Coltrane, Wes Montgomery. Time beat me on all counts)
(Okay, I guess that's way more than one... and I have to throw Miles in there, too))

Django, Louis Armstrong. I put off Magic Sam, thinking he'd be back. He died 2 months later. Somehow I never saw Clapton, but I did get to see Page and Beck a few times. Was able to see JL Hooker, Muddy, and BB King over a stretch of about 8 months in the late '70's. Hound Dog Taylor would have been a hoot. I bet Professor Longhair was a hell of a show. Had a chance to see the Tommy Bolin version of the James Gang and turned it down. Bo Diddley played the bar down the road, but I was only 17 so they wouldn't let me in. My brother shook his hand after the show. I really would have liked to see the '40's Ellington band.

Another thread got me thinking about musicians (I include singers) I wish I had seen but never did - either my mistake or they lived before my time. Wondering Who others missed out on. What one artist would you want to have seen most of all?
For me, at least today, it’s Charlie Parker.

Charlie Parker is definitely a good choice for me as well.

Among guitar players, Ritchie Blackmore. There is a theoretical chance still, but yeah.
Among male vocalists, Ronnie James Dio--and it is that much the worse cause I had the chance.
Among female vocalists, Tina Turner.
