Of those who are not around anymore,
I think Jerry Garcia and Duane Allman are at the top of my list ( both just huge guitar and in general musical influences on me)
Then, John Lennon.

Of course there are so many jazz guys I would have loved to have seen, (after finally, around 2000, getting familiar with Jazz- about a '3 year 'Listening Party')

John Coltrane, Cannonball Adderley, Miles, everyone!

As for those still alive, whose music I really love, but know I will never see-
Elton John
Herbie Hancock
Stevie Wonder
Paul & Ringo

Changing my answer- I'd really like to go back to guys like Sor and Tarrega to see how guitar technique changed from there to the Segovia era; there doesn't seem to be a lot of information available.

John Prine. I discovered him about 2 years before he died, had one opportunity to see him in Portand and missed it.

The Kinks. When I was in HS they played in Seattle but I wasn’t s concert goer then. Love that band!

Tom Petty with Dylan. I got to see both separately – Petty just once in the Tacoma Dome – but together would have been a dream.

Still want to see Willie Nelson, but he hasn’t toured up in the northwest for a few years

Zeppelin - passed up a ticket to what ended up being their last show ever in the US. Hadn't gotten into them yet, was obsessed with Kiss at the time.

Grateful Dead - grew up in the SF Bay Area, had Deadhead friends who'd seen them hundreds of times. Passed on going to see them probably 50 times figuring they were always playing and sometime I'd get around to it, then Jerry Garcia died in the '90s.

Rush

Also seen a couple of musicians but didn't appreciate them because I was so young and didn't know who they were:

Roy Orbison - saw him open for The Eagles; to me and my high school friends he was just the guy who sang Pretty Woman and Van Halen did it better (I know, lame). Spent our time walking around the venue and screwing around while he played. Probably my favorite singer of all time now.

Ray Charles - saw him at my county fair in the '70s when I was a kid.

Re-reading the OP; just ONE artist I wish I could have seen?
Thinking on that a bit more it would have to be Janis Joplin.
Seeing YouTube recordings she was such a force of nature on stage.
I'd love to have been present for that.

John Prine I only discovered WHEN he died :(
Don't you just hate it when that happens!?

And he in turn led me on to discover even more dead guys: Blaze Foley, Townes Van Zandt, Jim Croce - Music I didn't think I much liked before; Prine was my gateway drug!

The Stooges opening for The Velvet Underground.

If you ask me tomorrow I may answer a completely different thing.
