I've also had it as "cowboy caviar," as mentioned previously, with lots of black beans, corn, cilantro, and avocado. No black eyed peas, that I recall anyway. This was back when I still lived in Colorado.

I make something similar called Southwestern Bean Stew; really it’s vegetarian Chill. Good stuff. Nice wrapped in a tortilla with a dollop of sour cream on top.

Yes.

There is a Texas this and a Texas that for most any food item.

There is a place I know that serves "Texas Guacamole" that is a bit of pico and salsa with large chunks of avocado that is excellent and far better to my taste than standard mushed avocado guacomole.

I only know it as cowboy caviar and it is delicious. A friend who is also an amazing chef makes 2-3 variations of it. Each is just different enough and each is excellent.

Hm. Just found it in Urban Dictionary. Seems the meaning changed when I wasn't looking.

When folks had it for breakfast back in the seventies, it was steak, eggs, and bourbon. The Age of Innocence, I guess. The times they are a-changin'.

(Though it never was safe for work!)
