Texas Caviar??

We have new neighbors that just moved in next door. A couple of weeks ago, my wife and I took them over an apple crumb pie as a welcoming present. We talked for at least a half hour, and welcomed them to the neighborhood. They are from Massachusetts.

Monday night, I heard the buzzer ring, and it was my new neighbors at the door. They brought over a dish of what they called Texas Caviar. It looks to me like a mixture of black beans, chick peas, orange and green peppers, tomatoes, and onions.

Anyway, last night that became our supper and it was SUPERB!!

The husband told his mother that we had given them the apple pie, and her remark was: “That’s rare! People don’t do that kind of thing anymore.”

Anyone ever heard of Texas Caviar?

I don’t know specifically what “Texas caviar“ is, but I’m sure somebody from the magical empire south of Oklahoma will chime in here and tell us how it’s bigger and better, and you don’t mess with it and you wouldn’t understand because we ain’t from there, and etc etc yee-hah ! 😂

But that does look good !

About 10yrs ago, Miz Diane went on a "dip binge" and we went thru about a dozen different homemade dips in as many weeks. One of the ones we regularly returned to was "Texas Caviar" (we never called it that). Very easy to make, very tasty.

Can of this, can of that, mix in dressing...done!

I make bean salad at least once a month. My version is like a big batch of pico de gallo with a can of beans and a can of corn added. A healthy dose of vinegar-based hot sauce too.

I would seek a second opinion from a Texan. I lived in San Antonio for a few years and though I ate plenty of beans there, I never saw or heard of anything named Texas Caviar. Of course, Texas is a huge place.

I never heard of it while living in Dallas/Fort Worth, but I’ve encountered it here in Minnesota, called “cowboy caviar”. It’s got avocado, black eyed peas, corn, black beans, red onion, cilantro, lime, and jalapeños. It’s simple to make, and delicious on salty tortilla chips!

Yeah, I've had it here a lot. That recipe looks different in that I don't remember any version that had black beans and corn, but the rest looks pretty standard. People have all kinds of ways of making things, and I bet that their version is good, too!

Looks good, like fresh salsa with beans!
Those are Black Eyed Peas by the way, not Chick Peas. I LOVE Black Eyed Peas!

A few years ago, a local restaurant hired a chef from Alabama. He put a similar dish on the menu and called it Alabama Caviar. They had to re-name the dish because some of us Northerners expected actual caviar, not black beans. :p
