sudden volume change

I have a guitar that suddenly changes volume. Usually down. I am guess this must be the volume pot? For awhile I thought the ground must be bad, but if it changes without me touching anything, it is probably the volume pot? I mean it just changes while I am playing. This is through headphones and amps in a variety of situations, so I am sure it is the guitar.

Could be many things. Pot, switch, solder joint or jack.
I'd suggest checking (or re-flowing) all solder joints.
Spray quality contact cleaner into the switch and the pots.
Check the jack's contacts when the cable is plugged into it.

I'd check for cold solder joints.

While working in electronics there's a term for that and it's usually due to a bad solder joint that acts-up when it reaches a certain temperature.

I’ve had a bad solder joint in amps and guitars that caused drop out. Sometimes troubleshooting a bad solder joint can be a real PITA. You can fix a failure but an intermittent can be even worse

This is simplistic, but make sure you're not bumping the knob. After that, I'd check cable, clean pots and switch, then check grounds, then the rest of the wiring, then pickup, in that order.

So the reason I think it is the volume pot is because when I twist the knob a few times the volume returns to normal. It is not because the pot is dirty. It basically happens randomly, then I spin the vol knob a random amount of times and it comes back.
