I plan on using a 12" 8 ohm alnico speaker and 6V6 power tube.
The standard Classic Tone 40-18115 would do. The impedance mismatch will give you a slightly more aggressive overdrive tone.
The Classic Tone 40-18030 does the same job with matched impedance.
The Classic Tone 40-18031 is the Big Boy 15 watt version with lotsa wires. Even at 5- 6 watts it's going to sound bigger.
The Weber VST W022905M is an import similar to the Classic Tone 40-18030.
I think the Classic Tone 40-18030 is the pick of the litter for your application.
I've used ClassicTone for all my Champ/Princeton OT's. Built two at once with their 5 watt and 15 watt version OT's. Side by side A/B/ comparison, I couldn't justify the cost or weight to ever use the big one again. Me and a friend went back & forth, multiple guitars, etc. There was a tiny bit of bass overtones/"warmth" to the 15 watt, but when cranked and saturated, the 5 watt actually sounded better. The bigger one sounded muddy with the extra bass.
