I have a body and pickguard ready to assemble and am torn what color of pickups to go with. I'm going to use gold hardware on this build and have two white single coils. Would another white humbucker look good or a chrome cover on it? What are your thoughts?

I feel like a nickel covered humbucker is never a bad choice.

What is the neck and fretboard wood?

The body has been routed for a HB since this photo was taken so it will definitely fit

Assumed this was the case. I was being facetious.

I agree with others, the red does not do it for me. I agree with hopdybob on the tiger stripe, WOW, but I would go for the cream covers and knobs. I am going to order a piece of that tiger stripe for my pine telebacker build!

I wouldn't go with a nickle or chrome covered humbucker if you are using gold hardware.
Personally, I would use and anodized gold pick guard and an uncovered black humbucker and two black single coil pickups along with black knobs and switch tip. I think white pickups and knobs/switch tip would look good too though.

Top to bottom: Cocobolo, Maple Sunburst, 4-Ply Tortoise. The middle could use a light shot of Mohawk Encore Brown Spray Toner to darken it to match the body or depending on your maple neck color, might be fine as-is. I think any of these would make a stunning guitar.

All are from eBay sellers that I have dealt with and turn out nice products.

    .

My suggestion for you is go all black or two black single coils with a gold humbucker since you are using gold hardware.

The Strat here has since gone with black bobbins... hardware here is chrome.

Strat has Hendrix reverse angle bridge pickup with an Armstrong Blender mod (SSS blends to HSH) and the Tele has a 4-way switch on a split humbucker.
