Mint, or anodized gold.
I don’t like the mint guards - I’d go for parchment of those two.
Why not think of a totally contrasting one - black, tortoiseshell, ......
I have black on my Arctic White Tele... but I think a white guard would look good, as well. I don't think I'd like anything other, except perhaps parchment.

But if your choises are between white/parchment/aged white/what ever white(ish) and mint, I’d vote for mint.

You've made the correct choice of the two you asked about. Will be a great looker, enjoy it.
Recently have mint, also bought a parchment, originally white, all three ply. Not sure which I prefer. The body is arctic white, but has become quite creamy over the years, so there’s that effect too... I’d get both and switch ‘em when you get bored with one or other... I also switched pickups and knobs along the way...
But, if you could hear what that Cavalier Firebird pickup sounds like, you wouldn't be calling it "one of those dang humbuckers." Yep... sounds truly amazing. And, not a peep of noise nor hum.
(I'm not a huge fan of humbuckers these days, myself. But I don't lump Firebirds in with the PAFs.)

I like both parchment and mint. I think a triple ply White-Black-White to match the body would be cool.
