So, on a basic 3 way switch, when your new neck is wimpy, you flip
leads around , and voila, the neck now has full power.

However, if center positions is now out of phase , or thin
    and wimpy, are you hozed.

Just looking for future questions when I load 2 diff mfg this week into
    tele.

Maybe, out of phase is not the word.

Maybe, it will work out ok.

That sounds about right but if it's a Tele then you might be putting the shield cover on the hot side. There's a couple of threads about moving the ground wire from the shield

No, that's really not it. A single coil pickup, by itself, does not have any phase. Phase is a relationship between two pickups.

So if a pickup sounds thin and wimply all by itself, it's an issue with that pickup - a flaw, or you just don't like it.

The only positions where phasing is even a thing is when two or more pickups are on at the same time. If your middle pos is out of phase, you can swap the hot and ground wires, except if, as mentioned, it's a tele neck pickup with a traditional cover, in which case that needs to be disconnected from the ground wire and grounded separately on its own.

Not so fast, there. The leads are two ends of the same coil. Swapping leads only inverts the signal, it doesn't add or subtract anything.
