Hmm - interestingly - it seems my pickups are wired out of phase. The middle setting is super thin and the volume drops way down. I don't see anything wired incorrectly - it just appears that one of the pickups has it's wires reversed. Weird!!! Is there a way to tell if a pickup's white and black wires are reversed?
