thanks! I was going to ask if voltage rating mattered..
they are all over the map

That's because in different applications they can have a wide range of voltage going through them, in a guitar we are talking millivolts, so it doesn't matter, the only real consideration is size, the larger the voltage handling the larger the capacitor (usually)

Another trick that you could do is to put two .01uF caps in series. This assumes you already might have some .01uF caps that look 'period correct'.

I just thought I'd suggest it, because .01uF caps are very common, with both film types and ceramics.

Also, while they may not look quite as 'period correct', I also think that axial-style caps are worth considering, because they are easier to wire up, in this specific instance (going from switch lug to pot housing). I'd personally suggest the monolithic multilayer ceramic ones.
