Making bread today...

    While logging off facebook for the day (since 6:30 this morning until after 8 am tomorrow), I plan to do a few things. A couple of weeks ago I got a want for a Bierock, made some and had a bunch of dough leftover. I let it rise in the refrigerator for a few day then made a loaf. But, while baking I misted the oven several times during the bake...got a nice loaf of bread that tasted good.

    So, last week I start more doug, it has been in the refrigerator all week. Took it out early this morning:

    And have punched it down and is on it's second rise...

    Just make regular dough, I mean Doug and let it rest in the refrigerator a few days... helps build flavor, not as course as sour doug though. (first rise, no need to knead). Do the kneading on the second and third rise. I do my 3rd rise on it's baking surface so that I don't disturb Doug when I move him to the oven.

    That ought to last me a couple of weeks (I slice it sandwich style and put two slices per freezer bag and take out when needed).

    This loaf also has some mashed potatoes and fresh oat flour (ground myself in a food processor) added in and I used local honey for the sweet...

    That looks good. I used to make home made bread when I was eating wheat (before I knew I had an issue).

    When my wife was pregnant with baby #1, I made some french bread for her as a treat. She came home, smelled the bread and yeast, and promptly ran to the bathroom to hurl. Thus ended the home made bread making.

    We also used to use a bread machine. There was a hawaiian sweet bread recipe that we liked. Fast forward / OMG my digestive issues are gluten! / we have not done that in quite some time, and never will again.
