I need a single humbucker Stratocaster.
    Any suggestions?

I looked into Warmoth, but I suck at setting up guitars.

I'll bet Charvel or Jackson make one. Personally I would go partstcaster and if you don't want to assemble it, find a reputable tech who will do it. That can be a good way to go.

It doesn't sound like you want a Strat. You are looking for a "Strat" shaped guitar with a single humbucker, and there are plenty out there.

Kramer or EVH, but most likely Floyds. G & L might have one.

G&L Rampage Jerry Cantrell one humbucker in the bridge and a Kahler tremolo.

I've been eyeballing these, as well. They also come in black.

A friend of mine had one of these. Black. I don't know what the pickup was but it was a mean little guitar.

My relic pointy reflection of the 80s ...
Some ebay pickguard sources have Strat pickguards with a single pickup routes. I bought this guitar used and abused and it happened to have one, but when I was searching for a tort reverse Hendrix angle SSS pickguard I saw blank and single pickup options. $10 price range.

A recent build. You can cut your own from 1/8th inch hardboard from your local hardware store, sometimes they sell smaller 'handy boards' in 2x2ft size. Then stain and clear coat. The Jazzmaster here has one of these, ebony stain with only a single matte clear finish on it. I could add more coats and polish it up to mirror level but the matte works for me on this guitar. If you have a Strat pickguard it's easy to trace and file.

Yes, Fender made a Tom Delonge and more recently there was a Squier version
