Now is that soup that is leftover or soup that is made from leftovers?
I often freeze leftover veggies to make soup later with tomato sauce and chicken or roast.
The first meal is soup made from leftovers, then the leftover soup is tomorrows breakfast... If I had some bacon, I could have bacon and eggs, if I had some eggs...
When we make soup we usually freeze a quart for a week or two later. Trying to stay on top of whatever gets frozen so we don’t have any surprises trying to figure WTH is that before it gets trashed

I have leftover chicken lime veg soup and chili in the freezer, I made a big cauldron of both last week and froze some for later. Tortillas and cheese will go well with both. And of course, it's always better the 2nd time around.
I use the leftover carcass of a supermarket roasted bird.
Add vegetables,rice or pastina,stock,and you have soup in 45 minutes.
