Gosh I wish I knew some notable kit companies but I guess I really don't. If I wanted to buy I might search Google and Amazon with the search "Telecaster Kit For Sale"

Tele kits but also strats etc. Looking at finding a little project. Nothing 'licensed' to be accurate, more just something to mod and be creative with.

Well there are some very nice plans available in this TDPRI site. If that would be helpful.

One way to get a kit is to buy a cheap used guitar, take it apart, and sand the finish off everything.
    Voila!! A kit!!
The downside is sanding/scrubbing all that crap off. The upside is knowing the parts will fit back together

Their page for 'guitar kits' is currently not working, but from conversation I had a few weeks ago with Simon, their MD, the kits are definitely something they will be selling. However, they will be aimed at the higher end of the kit market.
