Some people's definitions of "jaw dropping" are sure different from mine. Really great blues and/or lots of notes in a short space does not constitute jaw-dropping IMO. Suffice to say if I can play it, it ain't jaw dropping.
I'll just add that the first name that came to my mind was Doyle Dykes but there were two or three videos in this thread of players I had never heard of who fit the definition.

Frank Marino (Mahogany rush) one of the best and most underrated.
Kenny Burrell doesn't exactly cause my jaw to drop, but I surely do enjoy listening to him.
Pat thrall. Saw him in 1980 with the “Pat travers band” I was amazed at how versatile this guy was and still is.
