I'm making deer hamburger today...

    Finally got off my (fatt?) butt and started using my grinder to make hamburger out of the venison I have left in my freezer from last year. The first batch turned out good!

    I'm doing it one pound at a time and using pork trim I bought yesterday from a butcher shop.

    Curious...what percentage of your grind is pork? I imagine you want a good amount as venison is so lean.

    I haven't been hunting in 3 years, but I have a butcher shop less than a 5 minute walk from my house where I can order in just about any game meat I want. Besides venison and elk, I can get ostrich, bison and alligator. If only I could get some armadillo for Texas chili (kidding).

    What cuts do you have?
    I only burger and stew front stuff.
    Most hind stuff is good enough for roasts and steaks.
    I've served loins to people who didn't know it wasn't filet mignon.

    Yeah, I'm using the front muscles for hamburger. I marked the bags as "burger".

    Been waiting for the weather to get cold enough to freeze to go hunting. Tomorrow night it's supposed to be the first freeze of the year. The durned mis-keeters...
