I had wet ribs tonight at Adams Rib just down the street a couple blocks from my neighborhood. They're the best.
Nah,I'll just stay home, thanks.

I don't know! I haven't been able to see my ribs since I was 11 years old, 61 years ago. I guess they're still there...

I'm making ribs today. Dry rub for a a couple of hours than I cook on low heat with wood chips in the smoker box on my gas grill for 4.5 hours. Its 31 F outside today so they can cook nice and slow. I put some sauce on for the last 15 minutes and more for dipping. I'm using hickory chips today.

I eat ribs maybe once a decade, 'though I like them. I've never heard of wet or dry ribs.
Since you asked. It describes how they are cooked. Wet ribs when cooked are mopped with sauce multiple times and when served have a wet look and when picked up leave your fingers, and mouth with sauce on them. They are real messy. Dry ribs are given a dry rub of spices and are cooked slow and aren’t continually mopped with sauce. This is a general idea of the difference. If you have read in this thread others cook them in varying manners but this describes the base result of wet or dry.

There use to be a local BBQ joint that offered both beef and pork ribs on their menu but under the beef ribs it read, "BEEF RIBS, Same Old Prison Quality, Really Keeps You Chewing"

The warning on the menu always made me laugh!

When I’ve had beef ribs, I like them. But what popular places (preferably in southern Maryland/ DC) offer them? They seem hard to find.

Christmas day I fell about six feet to my side with my fist perfectly positioned to punch myself in the ribs. I made a quarter pipe from my deck railing to drop in on with my snowskate, which immediately stuck and pitched me straight to the ground. My rib still hurts. I don't like it.
Oh wait...
