GOSH DANG IT!! Moussaka Mistake...

    My first time making a traditional Greek moussaka. It was going so well. I had performed all of the steps perfectly. It was time to assemble the moussaka. I placed half of the cooked eggplant on the bottom of the baking pan, added the meat mixture, covered that with the bechamel sauce and topped with the last of the shredded cheese. Then into the oven.

    Time to finish cleaning. Wait. Why do I have so many cooked eggplant slices left over? OH MAAAAAN!

    I forgot the second layer of eggplant. Grrrrr! Well... it is what it is. I added the remaining eggplant to the top of everything. This was my first attempt. I bet I don't make the same mistake again...

    If at first you don’t succeed, you are about average

    I’ve done similar oops. In almost 99% of the it worked out. This is at home and not a high scale restaurant

    If your bechamel doesn’t taste like wallpaper paste you nailed the hard part. For the rest of it, just layer like lasagna, bake, and enjoy.

    In 1999 our little blues band recorded our CD, over the span of a few weekends at a fantastic funky studio in Baltimore, MD ( we live in VA)

    And when we were done with our sessions in the evenings, we'd go over to 'Greek Town' just a mile away, to one certain small restaurant ( Acropolis?) and eat just huge mounds of herb- marinated grilled ( wood/coal?) beef and pork like we have NEVER had before or since.

    And side dishes of simmered green beans, roasted potatoes, the fried cheese!

    I generally have another beer and I tell the wife it’s my “take” on Greek Moussaka and enjoy the meal... Since it was “Yummy”... No harm... No foul...

    I was happily making pork in green mole with tomatillos, and realized that the recipe didn't include tomatillos. Which made perfect sense, since I was on the wrong page in the cookbook. So tomatillos go OK with pumpkin seeds, it turns out. :oops:
