    (Having to cover up the taste really didn't improve the case for the catfish all that much!) :D

    Forget the blender for salsa. Get a molcajete, season it properly and with a little practice will be making perfect salsa

    I just cut and dice the tomatoes and onions and everything else by hand, then mix them with a fork in a bowl.

    I like catfish. Some wild caught catfish can be pretty muddy tasting so, your'e not alone.

    I have made crappie tacos. Craptasticly de-lish.

    For salsa, get a Ninja... a can of diced tomatoes, a jalapeno pepper, some cilantro, a piece of onion, juice of a lemon, and a little salt...pulse a few times and enjoy.The Ninja is a salsa machine...

    Being South Texas-based, I'm going to have to agree with the general assessment that "everything is better in a taco" (see tripas, barbacoa, etc. for details) but, if something isn't good to begin with, then it isn't going to magically be good because it's in a taco.... That's not a judgement on catfish. If you use gross, powdered, fake eggs that have been sitting in a steam tray for 3 hours to make a breakfast taco it'll be better than the eggs on their own but it's still probably gross. :)

    I have a retired neighbour who likes to fish at his cabin. In return for bringing in his mail and rubbish bins, he gives me trout and kokanee (lake salmon). Deal!

    I’ll use tilapia and really season the batter up to give the fish some flavor. I’ve also grilled tilapia (on a grilling mat) with good success

    I've had some great grilled catfish tacos.

    Prefer Mahi Mahi, but have had many others that are good too.

    I have broken two handles on the aluminum ones. I would not recommend them.

    Finally got around to building myself a decent press just this last Sunday. 2" thick beech plates, hickory axe handle, thickness adjustable solid hinges, 11" tortillas no problem. Used it straight away. We had corn masa enchiladas filled with chicken and cheese with a tomatillo sauce.

    I thought there was heat involved, like in a pancake or crepe iron.:confused:

    so if that isn't the case I'd make some Tele tortillas.
    two Tele bodies hinged together ...voila :cool::D
