    There's a new store called Fleet Farm in Sioux City, Iowa and I was looking around the store for the first time yesterday. They have a nice one for $27.99. I'm going to pick one up as soon as the river goes down enough to fish for catfish here. I'm going to make smoked fish empanadas.

    Now I need to buy a mixer so I can make my own salsa...

    ...not sure about your terminology here, but whatever. An empanada is more of a south american thing, not really tortilla based - more like a stuffed meat pie you might find in Natchitoches, but Chet, maybe they do things different in Iowa. They are very common in Colombia and Argentina, for example, but more of a pie dough/bread type crust rather than a tortilla.

    down here, the stuffed taco thing is called a pupusa, comes from central america, like El Salvador and are wonderful things. Stuffed with beans, cheese, sometimes ground beef, sometimes a mixture of all kinds of things.

    Lots of places down here got fish tacos though - definitely from Veracruz, etc. the gringo version is to fry the fish first. Fried catfish taco, good stuff.

    You don't really need any kind of mixer to make salsa, though. chop, chop.

    there is a salsa here in Houston, specifically, though that looks like it's been put through a blender.

    fresh homegrown tomatoes, that's the thing for salsa.

    Fish tacos good. Actually, pretty much any tacos good. The trick to tortillas is to get the mixture right. As my friend’s wife said, when I asked her proportions, she said add just enough, and you’ll know.

    Another thing, look for a local tortilleria or Mexican bakery, or taqueria, and likely they will have hand made tortillas - hecho a mano.

    My go-to fish is wild sockeye salmon. I only had catfish once (cue gif) and it tasted muddy. Bad fish, wrong prep, acquired taste?

    Catfish makes good fish tacos. But you gotta prepare it a bit to deal with any gaminess up front (marinate in beer, coat in milk, etc...). And it's gotta be battered and fried. Grilled is no go for catfish tacos.
