Crawfish Etouffee. I could hurt myself eating that, and did last week! Actually very simple to make, and doesn't take very long to make. finding fresh crawfish tails at a reasonable price is the biggest problem.
Fried Polish sausage with potatoes and chopped onion, with some Frank's kraut on the side. Cooked in butter in a cast iron skillet.
My BBQ ribs: dry rub consisting of garlic and onion powder, and Texjoy BBQ rub. Smoke (hickory wood only) on pit for 2-3 hours, then place in disposable aluminum baking pan, add about 3 cups of liquid- your choice, I use water, others may want to use beer, etc. Cover tightly with foil, return to pit and let cook for another 6-8 hours, low indirect heat. When done, reserve liquid left, and pour over ribs when serving. Add in mama's special potato salad and Ranch Style Beans. YUUUUMMMMM!
