Do you eat the skin of your baked potato?

Furthermore, when I have “baked” it on the grill in foil, I scoop out the innards and eat those first. Then I put the carcass back on the grill to crisp it up. When I take it off I add a pat of butter to each half, fold them like a taco, and eat the skin. That’s the best part.

Yes, it's the best part.

Sour cream and black pepper kind of stirred in with the main flesh of the potato. Then when it's down to just the skin, a little more sour cream and black pepper on the skin.

I always cook bake an extra potato to save and use for hash browns.

Yes. But if I'm making the baked potatoes myself, I do scrub the hell out of it. A green Scotchbrite pad makes quick work of it. Sometimes it looks like I've sanded through the skin into the pulp, but cooking shows that the skin is still there and still fine.

Absolutely. I never bake in foil, as that leaves the skins all mushy. (Of course, if the tater was baked in foil, I still eat the skins. As my mother used to say, that's where all the nutrition is!)
