Ok. I teach this stuff. Ball up your fist and stick out your thumb. It's pointing to current flow. Turn your fist over and that particular wind has current flowing the other direction your thumb points. String winds have nothing, nada, anything to do with it unless its conducting. A strong is seen as just a piece of wire to the coils (which are doing the "pointing").
Other than that, I'm assuming this thread goes along with the one about "directional" cable. Funny how voodoo jumps around. Hey, it's the Internet, so it must be true!!!

Ok... Now ball up your fist, stick out thumb, note current direction, board plane, fly to Australia, direction is now flipped, but globally, not locally. Go to bar, Put ac/dc on jukebox, get in fight. Punch with balled up fist. Note that current direction does not seem to influence flow of force. Go to beach, hold out fist, note direction of current in both coil and water. Go surfing.
I've wired my Les Paul "Peter Green style". I.e. Out of phase in position 2. Which strings should in buy? Do I need a hybrid set? Also, what is the accepted norm for Strats with reverse wound middle pickups? I don't want to make a total tit out of myself getting it all wrong!!! Confused???

Yep. This needs much more discussion. Out of phase and RPRW pickups could negate your string winding direction benefit.
I was thinking that a battery unit could induct a counter current in the string dipole when in those positions.
It could be silky smooth sliding in one direction and rip skin off the other. I Like it!

Shouldn't the direction respond with the note your playing. And also shouldn't your headstock always point in the right direction? For example if I play an E the string should be reverse wound and the headstock should point towards 273°. I don't know if you ever experienced the phenomena but you can see the guitar heros jumping im circles to get their headstock towards the right direction.
Ok, if we have concluded that its an inductance caused by having a core wrapped in a magnetically sensitive wire and that its the direction of this wrapping that determines the directional qualities, then, I propose this. Instead of being wrapped by a continuous wire, why not rings? Tens of thousands of little loops. Like donuts on a rope!
There are no strings and I play the sounds between the notes .
Every 10th ring could be made of brilliant pebble, to...you know... help align the crystal lattice matrix and stuff.
Not now...I just solved the bidirectional hand problem... its like having two left hands....
