Brad has a great solo piano version of Paranoid Android, too.

I've always liked Santana's version of Brahm's Symphony No. 3

I'm a fan of traditional blues, but I love this rendition of Son House's "Death Letter":

Lou Reed's take on "This Magic Moment", from the great Doc Pomus tribute album...truly magical, to my ears!

"I just want to make love to you" by Foghat doesn't sound like Muddy Waters version.

All the various "Picking On XYZ" bluegrass covers of rock songs qualify, though some of them are better than others.

I did do King Crimson's 21st Century Schizoid Man in that manner at one time. That took a bit more arranging than most other bluegrass covers I've heard. Unfortunately I found out that if the audience isn't familiar with the original, the effect of the very different cover is lost.

Jason and the Scorchers Country Roads

Electric Light Orchestra Roll Over Beethoven

The Move The Last Thing on my Mind sounds nothing like Tom Paxton's version.
