Cooked another roast in the Instant Pot

    Browned both sides and put it in the IP with a little water/salt/pepper. It only took 6 minutes for the IP to stat it's countdown. This tim I cooked it for 60 inutes vs 2 hours the first time... I am using the "bean" setting. THe 2 hour roast seemed a bit more tender, that could just be the meat.

    Anyway, I save the broth and will use it as cooking liquid for the next roast (I am still on the hunt for grass fed beef)

    I want to get one of those pots and see how it is versus the old school Crock Pot, I just haven't gotten around to it.

    One of the first things I want to do is cook some lamb shanks in it in broth and vegetables.

    What size do you need for a big roast?

    I use a Zavor pressure cooker (a lot like an Instant Pot) and one of my favorites is a thing called Mississippi Pot Roast. You should google it and try it!

    You may need it for leaness due to health concerns, and I do not knock that.

    But I forewarn about the depth of disclosure by producers (about what they are really doing with supplemental feed in addition to grazing them on a big field) and the fact that people that have never raised a steer and processed it seem gullible about what grass feeding can yield. It will not yield prime beef (highly marbled) or even high quality choice beef; it will yield select and in some limited breeds (like Akaushi) can grade as choice being finished on grass.
