Got a nicely burnt potato chip in my bag of chips today. This _rarely_ happens anymore. I seem to remember many more burnt chips when I was a kid. I love 'em!

Do you like burnt chips?

I had a summer job in Connell, Washington at a potato processing plant. I was trained to spot hollow heart in spuds, where they are rotted inside. I also picked out by hand burnt little fries, tater tots, and maybe chips. I am sure potato quality assurance has improved immensely over the years. I couldn't eat a potato item for years afterward. The guys were all told to get a haircut over the weekend, or on Monday we were going to be loaded on a bus and driven to town where Floyd the barber, or whoever, would do the job. That was in 1970, and people really did talk that way. I don't think there was ever a bus.

I thought the burnt chips were the ones that were caught up in the fryer for a few cycles.

Last week I had a loaf of bread that came with the corner of it being double-cooked.

I can't recall the brand names but they're a couple chip makers that sell entire bags of burnt (cooked dark brown) chips. Could be a local thing since they're not national brands. We also get double smoked Lebanon Sweet Bologna!

Well, you do live in the potato chip capital of the US! Wise, Snyders, Utz, Herr's, Martin's and on and on...
I do love some good Lebanon bologna, too!

I live across the street from the Bickels building . They no longer fry chips there . It is a distribution center now .
Charles chips was very near as well as Stehman's .
The browned ones are the best .

I grew up with Wise chips, too. On average they were substantially darker than other chips. Loved them!

BTW - #1 in PC consumption is big ol' fat Michigan.

Better Made regular chips are fine but - when you stumble on a bag of over-salted Lays you can keep any quaint regional brand you got and gimme those...

There is a local potato chip co around here called Kitchen Cooked. There is usually a few nicely burnt ones in each bag.

There is a BBQ place in Rock Island IL called Jims Rib Heaven and they burn their french fries which is also quite nice.

I worked for Wise when they had a plant in St Augustine, many years ago. One of the many jobs I did there was chip picker.

I sat by a conveyor belt that all the chips rode on when they were headed to the machines. My job was to pick out any bad chips, or doubles that would stick together. The doubles didn't cook all the way through when they were stuck together.

Twice a night, they would stop the fryers long enough for me to squeegee off the stainless steel shaker that the chips bounced along when they were headed to the conveyor belt. You'd be amazed how much grease and crumbs would accumulate over a 3 or 4 hour period.

Nothing better than warm chips right from the fryer, but I got to where I couldn't eat a chip. Just too much of a good thing I guess. Plus you always went home smelling like potato chips.

Only worked there about a year before they layed the whole 3rd shift off.

Yup, had a bag recently. Herr's if I recall correctly.

Ahhh, Larry. Washington! Can't wait until my summer trip to Seattle where I can get Tim's Cascade Chips again.
