If you install binding with ca glue, will the alcohol from the shellac compromise the bond when finishing the body?

No. I have French polished one guitar with binding glued with CA and many with lacquer finishes and absolutely no problems.

The alcohol in the shellac evaporates off pretty quickly, and when it's in solution with the shellac it's too thick to wick into the binding.

CA glue is sometimes used as a pore filler and people finish right over the top. One of the reasons I really like it for binding is that it does not show badly under finish if I get a little into the top wood. Plastic cements and wood glue both leave discolored areas if you don't get it all off.
I've tried other adhesives for both wood and plastic binding and water thin CA just beats everything.
