Mooer ana echo, not very long delays but sounds good. Similar to the other mooer delay pedals, it has one Big knob and two tinies.

Lovepedal Echo Baby would be the only one knob delay I can think of

    1. Get a Boss DD-3.
    2. Set knobs (from left to right) at 12 o'clock, 9 o'clock and 12 o'clock.
    3. Put duct tape over them.
    4. Use remaining knob to get three great settings in the 1st three positions.
50ms short ambiance for a little "air" around the notes.
200ms nice echo for country/classic rock, etc.
    800ms for spacey solos.

One knob, three great settings...done.:D

Seriously, this is a super versatile setting for a DD-3.

I've no experience with this one, but the Ibanez DE7 is a delay from the tone loc series, which means the knobs can be depressed to sink into the pedal, to avoid changing settings. That one might be an alternative to the duct tape solution

Sounds like a great idea, IF the one you find has time and repeat settings you like (for a touch of sustain/ ambience you request).
The other problem might be the fact that the one knob would be mix, which for what you want (and what I keep a delay on all the time for) is a fidgety setting easily brushed into excess or inaudible setting.
For slapback, one knob- would have to be time, assuming non-adjustable unity gain and single repeat?
Duct tape or epoxy would be the answer I reckon.

The tone loc knob design should be more common.

the red witch seven sisters violet delay has two with an internal trim for mix. surprisingly I didn't miss the mix knob as much as I thought I would.

I think a delay needs at least 3 knobs to be fully functional.
    Time. Repeats. Mix.

No repeats no slapbacks.... just a lead delay would be decent

Ain't that the truth... I just got an excellent delay (Malekko 616) for Christmas, set my dad back $150, and that was a bit spendy. I can't see spending more for less versatility, but that's just me.

Doesn't exist, even that lovepedal the knob secretly a dual function design to set modulation.

You will at least need a delay time and mix knob to set up for your thickening tone, you have to control those to make it sound like you want.

    Try mooer spark.

You could also get a TC Electronic Flashback Mini, and create a toneprint where the Feedback and FX Level controls are set to a fixed level, and only the Delay knob actually does anything. :)
