I think you're maybe skipping too many grits. Depending on how deep the scratches are, 180-220-320 would be where I'd start.

Started the neck - I used my miter saw to cut a 10 degree angle, then routed the truss rod slot, then used a jigsaw followed by routing templates...
Then routed the cavities all around.
For the horn carves, I used a 45 degree router bit at progressively deeper cuts along the splines, then used...
Then jigsawed the basic shape out, then routed to shape.

Keep in mind, the first Pic you showed is actually a 5-screw mount. I've used stewmac's version on 2 builds and been extremely happy with them....
