Spanish folks - your top tips for Paella please

Uh oh...now you're really opening the flood gates. Is it Creme Bruleé or Crema Catalana? Are we talking Spanish flan, Cuban flan or Mexican flan? Guitarists reading this thread are going to put on some serious pounds (kilograms).

Spanish folks - your top tips for Paella please

I just brought home a paella from El Siboney. Full report to follow. Only the owner was basque. The cooks were from Valencia, Catalonia, Granada, Madrid and the Matanzas province of Cuba.

Spanish folks - your top tips for Paella please

I'll put it this way: Siboney is pretty decent for the money. An authentic Cuban take on paella isn't going to deviate much. Paella is traditionally from Valencia. There are some strong historical and cultural ties between Valencia and Cuba. José Martí, the revered Cuban poet whose name...

Spanish folks - your top tips for Paella please

Wait! I was in Miami and went to a Spanish restaurant called "El Carajo". El Carajo translates literally to the crow's nest on an old sailing vessel, but it has come to be the colloquial way in Spanish to tell someone to go to hell. The word play is brilliant. Anyways, there are no good...

Old Timer's: What's the first 45 RPM record you ever purchased?

Dang. Inflation hit my youth hard. By 1971 or so, it was costing me $1.00 just for a single 45. At 5 for a dollar, you made out like a bandit!

Old Timer's: What's the first 45 RPM record you ever purchased?

It is ironic that you bring up the lyric from Three Dog Night's "Joy to the World". That was the big single on "Naturally", the first album I ever bought. The Partridge Family albums my aunt and my mom bought for me before those were gifts, but you can imagine the look on adults in the...

Old Timer's: What's the first 45 RPM record you ever purchased?

"Ride Captain, Ride" by Blues Image. It must have been 1970. I still have it sitting in my collection of 45s.

    Pixies Rock!

One of the things I love about them is the creativity. No one is trying to be a virtuoso, but each member of the band plays an essential role and fills it well. They played to their strengths and put some excellent tunes as a result.

    Pixies Rock!

While not my favorite band, I do consider them an essential one. There is some great material in their body of work and some interesting themes. Gouge Away, Where Is My Mind, Monkey Gone to Heaven, Broken Face, Something Against You, etc.: there's some excellent stuff there. Even the very pop...

Spanish folks - your top tips for Paella please

My heritage is threatened! Spaniards are very proud and protective of their gastronomy. Valencianos (those from Valencia) are no different - especially when it comes to paella. As El Marin pointed out, messing with the recipe defaults whatever you are making to being demoted to and looked...
