I'm in the market for a Princeton in the 1x12 configuration.

Is there any consensus on the best 12" speaker to pair with this amp?

    - Lacquered Tweed
    - 1x12" Eminence Cannabis Rex speaker

    - Wine red vinyl covering and wheat grille cloth
    - 1x12" Jensen P12Q

    - Fawn Textured Vinyl
    - 1x12” Celestion® Greenback G12M

    - British Racing Green Textured Vinyl Covering with Wheat Grille Cloth
    - 1x12" Celestion Greenback

    - Limited Edition Sonic Blue Vinyl
    - 1x12" Celestion Gold Alnico

I almost always favor a Jensen.

It depends what 'sound' you're looking at and where you're playing.

    a few thoughts:
If you are gigging, the Princeton is a pretty gritty amp except at home.
-The Greenback, the Crex will only add to that nasty grit.
-The Jensen alnico: you better like alnico and early breakup. I dont like those RI PQ's at all, but some do.
If you are a home player, disregard this.

I have a CRex in my Deluxe Reverb. It's been in that amp for five years or so. I also upgraded the transformers in the DRRI to Mercury Magnetics. Given that I play mostly jazz and 50's style Chicago blues I like a darker tone. The amp and speaker deliver it in spades. With that said, I've been thinking about buying the Sweetwater Tweed, but haven't been able to rationalize the purchase just yet.

I played one of these at my local guitar shop this past weekend. I was quite tempted to buy it as it offered a quite different tonal palette from my PRRI which has a Celestion Gold 10" in it.

As noted above, I have a PRRI with a Celestion Gold 10. It's my "go to" amp. The Gold 10 puts a little hair on the notes and delivers a nice tight controlled bass response.

In the end I think you really need to play the amps and determine what sounds good to your ears and, perhaps most importantly, what best suits your style. Put another way, which amp/speaker combination delivers the tone you're hearing in your head.
