Fender first started using polyester under CBS rule about 1968...10-15 coats to achieve the 'Thick Skin' high-gloss finish. Polyurethane replaced polyester for the top coat in 1981 and shortly before the close of the Fullerton plant polyurethane began to be used for the colour coat with polyester used for the undercoat .(Duchossoir, p. 47)
Polyurethane is widely used in guitar production today even on acoustic guitars and can be used in such a way as to achieve thin coats.

My 1979 Start would be polyester, then, and my 1996 Tele would be polyester undercoat and polyurethane top coat, if I read your post properly.
