Are you asking...

.... how to STRIP the paint from your guitar?

Or are you asking about the worst accidental damage?

I'm real careful with my babies, and I don't think I've ever made any serious dings. However, I've just finished relicing a Partscaster body (poly finish), and I found that you can get those really authentic chips around the bottom edges by:
  1. Taking off the bottom strap button
  2. Taking the guitar outside and resting it on a rough concrete path
  3. Grasping the guitar by the neck, tilting the whole thing at an angle of approx 45 degrees
  4. Dragging it gently along the path for about 3 feet
  5. Repeating step (d.) 3 or 4 times with different parts of the lower body resting on the concrete
This tends to create random paint chips, which can then be slightly smoothed off with either a Scotch Pad or some steel wool to create that "aged" feel.

You can also rest the guitar ON its strap button, vertically, about 6 - 8 inches away from a brick/concrete wall, and then "spin" the guitar sharply against said wall a few times so that the side edges get those chips & dings just like you get every time you are not so careful handling your axe when you are in a tight spot!

I have a nice patch down to the wood near the bridge below the pickguard where I pick and rest my picking hand...then there's the incident 3 days ago when I installed a new pickup and found that molten solder blobs melt through the nitro down to the wood in a matter of seconds.
