I saw him a few weeks ago and he used that for acoustic type sounds. He used his strat for wailing guitar solos. he's a phenomenal guitar player, but it gets somewhat overshadowed by how friggin' great he is at other things. He did the whole show with no bass player, laying it down with his feet and left hand while playing the upper keyboard of his Hammond and singing everything in the original key. What kind of human being can do that? he played a great set which pretty much avoided his 80's beer commercial stuff. It was quite jazzy for my taste, but he eventually played "I'm A Man" so I was happy.

Steve Winwood is featured in the June Vintage Guitar magazine.
In the article they mention his use of a nylon-string Telecaster Classical Thinline - a model that Fender has since discontinued on "Can't Find My Way Home".
