Finishing a guitar with poly.

I'm wondering if I should use spray on poly or brush on. Keep in mind that I do not really have the space for spraying and I'm not really good at it. Can I get a high gloss, smooth mirror finish with brush on poly if I sand and buff it right and use grain filler and sealer?

Yes. It will be a lot of work though. But all you'll need are some foam brushes, and a sanding block, apart from paper & polish.

Never underestimate the time and hassle saving factor of grain filler and sealer.
