Jimi's cover of Dylan's "All Along the Watchtower" redefined the song.
Same with Aretha's cover of Otis Redding's "Respect."
And Patsy Cline's cover of Willie Nelson's "Crazy."
And Iron & Wine's cover of New Order's "Love Vigilantes."
I also dig Ray LaMontagne's cover of Gnarls Barkley's "Crazy."

I also like the Red Hot Chili Peppers cover of Fire by jimi Hendrix at Woodstock 99

I enjoy all the covers the Byrds did, from Mr Tambourine man, to Eight Miles High where they use Riffs from Coltrane.

Any Heart/Wilson sisters cover of a Zeppelin tune is guaranteed to be good. They did a great job here as well:

Heart actually does Zep better live than Zep does except when Zep first started and Page was on the Dragon Tele.

Yep, and they were doing it in the seventies when Zep was still around and performing.
