My favourite is Ry Cooders soundtrack for Paris,Texas.....

it really suited the film,too....

Leo Kottke's stuff in "Days of Heaven:"



Also, Woody Allen's "Midnight in Paris" soundtrack has as lot of good original guitar playing in the manouche and euro-bossa vein .
