My #1 would probably be:

Muddy Waters - Live at Newport, 1960 - recorded at the Jazz festival. Ya also get Otis Spann and James Cotton. It just don't get no better than this.

Also love:

Warren Zevon - Stand in the Fire. Took 'em forever to reissue this one on CD. A standout backup band and Zevon is in fine voice. A killer record. We miss ya Warren.

Who - Live at Leeds. This is the LP where I realized just how good Entwistle was. Glad they finally released an expanded edition which had been available as a boot for years.

Allman Bros - Live at the Fillmore East. I was at one of these shows. The LP is a great souvenier.

Dave Alvin & The Guilty Men - Live at the Tractor Tavern. Soundboard quality boot and Alvin simply smokes on this one - Best version of "American Music" ever laid down.

Rolling Stones - Stones Touring Party '72 - Multi-disc boot of several shows from the '72 tour - the best Stones tour ever. They were more polished than '69 but still had a rough edge to them on this one which you don't hear on the '73 European Winter Tour.

Most of my faves have already been mentioned, but I'm going to add:

Bob Seger's "Nine Tonite."

Pink Floyd's "Delecate Sound of Thunder."

Also, Merle Haggard had a pretty good live album way back, but I can't remember the name.

I have also regarded a good concert album much higher than a good studio record. (I prefer the term "concert" to "live", as they are all live except Bobby "Boris" Picket and the Crypt-Kicker Five".) Concert recordings are more difficult from both the performance and the recording standpoints. There is nothing finer than the interplay and excitement of performer and audience ("Freebird! Freebird!" ad naseum).

Here are my essential concert albums:
Van Morrison- Its Too Late To Stop Now...
Traffic - Welcome to the Canteen
Talking Heads - Stop Making Sense
Joni Mitchell - Miles of Aisles
Arteha Franklin - Amazing Grace
Poco - Deliverin'
Loggins and Messina - From Every Stage (great Tele content)
Johnny Cash - Live From Folsom Prison
Bruce Springsteen and the E Street Band - Live 1975-1985
Van Morrison - a night in san francisco
The Grateful Dead - Live/Dead, Europe '72, Two From the Vault
Emmylou Harris and SPYBOY, - SPYBOY, At the Ryman/with the Nash Ramblers
Miles Davis - LIVE/EVIL, Pangaea
Rolling Stones - Got It Live If You Want It
Otis Redding/Jimi Hendrix - Historic Monterey Pop
Janis Joplin - Live at Winterland '68
Bob Dylan - The “Royal Albert Hall” Concert ~ Bob Dylan Live 1966 ~ The Bootleg Series Vol. 4
Josh Ritter - In The Dark
Bonnie Raitt - Road Tested
The Who - Live at Leeds
Laura Nyro - Laura ~ Laura Nyro Live At The Bottom Line

Bob Marley & The Wailers -- Babylon By Bus
Merle Haggard -- Live at Billy Bob's
Dr. Feelgood -- Stupidity

They were such a different band, especially right after Mick Taylor joined, so bluesy and Keith's playing is spectacular, Mick Taylor brought out the best in him...the obvious benefit of bringing a virtuoso in the band opposite him.

Stray Cat Blues is the perfect example from this record....absolutely scathing blues rock with amazing twin guitar interplay.
Hell yes! Great album. This is album is why I play guitar!!!

In addition to others previously mentioned:

Ike and Tina Turner - Oopoopahdoo (Sp.?)
Cannonball Adderly - Country Preacher
Dead - Skull & Roses

With the exception of Live at Leeds, Get yer Ya Yas Out and Built to Spill Live, I tend to like mellower stuff live i.e. Jazz, R&B. Hard rock and punk usually sounds better to me in studio recordings, or at the show in person.

Not my absolute favourite (ABB - Filmore East holds that title), but thought I'd mention Humble Pie's "Rockin' the Filmore" which does exactly that.

A very young and lively Peter Frampton playing lead guitar too.
