Favorite SIMPLE Easy Meals

What are your favorite things to make to eat that are super easy to do?

I like canned soup, but it has to be the yellow colored broth with noodles in it and sandwiches.

I also like a thin porkchop fried in butter, almost burnt.

There is a brand of canned tomatos from called San Marzano (white lable red tomato drawing) that has a recipie for a nice easy pasta dish (Pomodoro Cipolla)-on the label.
Some onions, the tomatos, a few spices, some cheese = Excellent!

Prepare whatever you want, and ignore for 6-8 hours.

My fav. and I have it several times each week..
Tina's brand frozen burrito,thaw,slice length way,sharp cheddar and jack cheese on top,then salsa on top.Cover with a paper plate and microwave till it all melts and runs together.Tortilla chips on the side.
10 min.and deeeeeeeeeeeelisusssssssssss..

Had a goodie last night, grilled pork chops with mashed garlic and mustard spread on top. Bit of fresh rosemary (I put a sprig in the tray under the grill so the smoke from it flavours the meat as it cooks too) with some steamed broccoli. Prep time, 3 minutes, cooking time 15 minutes. Delish.

Beans on toast with grated cheese. Always a classic.

Any fresh pasta with cherry tomatoes (halved and tossed in olive oil & balsamic), serve up with rocket and fresh parmesan. Have that at least once a week. Total prep and cooking time 5 minutes.

About a million variations on dried pasta with a sauce that starts: onion, garlic, and then diversifies into either tomato based sauce or maybe bacon... courgettes... whatever. You can't really go wrong with a few simple fresh ingredients.

Migas:
Heat up oil in a saute pan, add 1 soft corn tortilla torn into 1" peices and 1 hot pepper cut into rings. Scramble up 1 egg with some grated cheese and pour on top. Flip once and top with salsa. Eat. Yummy.

Maybe french toast and bacon with HP sauce or poached eggs on a toasted english muffin with some steamed spinach and bacon on the side.

i'm a self-admitted "foodie," but i love a quick basic meal, too.

currently, our "in a minute" meal is a few handfuls of cherry tomatoes, tossed in a deep skillet with olive oil. heat 'em till they explode, and add some fresh garlic and basil leaves. pour that over pasta, a little grated parm if you please on top.

the toughest thing about that is waiting for the pasta water to boil!

Grilled cheese sandwiches, or bavarian smokies and perogies. Just boil 'em up and you're eating in five minutes.

Taco Salad (15 minutes start to finish).

Whirl 2 Tbs cumin and half an ancho chile in a spice grinder.
Dice an onion and saute it in olive oil.
Add the cumin and ancho and a couple of cloves of miced garlic and saute another 2 min.

Add:

28 oz can of tomatoes
a can of black beans (rinsed)
a can of kidney beans (rinsed)
a can of cannellini beans (rinsed)

s+p to taste.

Serve over romaine and tortilla chips with sour cream or yogurt, grape tomatoes, grated cheddar, cilantro, and a squeeze of fresh lime juice.

Toasted cheese, inspired by Patrick O'Brian's Aubrey/Maturin series on the Royal Navy during the Napoleonic wars. Slices of French bread, toasted on one side under the broiler setting of a toaster oven. Little slice of cheddar on that same top side, then back under the broiler until the cheese melts. The bottom of the bread gets dry but not toasted. Serve with wine and a good book.

Leftover chicken or steak or pork or whatever from the night before - reheated and tossed on top of some salad greens with little tomatoes and cheese and whatever else sounds good on a salad. Ranch dressing. French fries are a bonus.

Soup and grilled cheese sandwiches is a nice, comfortable combination.

And two easy soup options... Try throwing some instant mashed potatoes in chicken noodle soup. Makes it a lot heartier - especially if you toss in chunks of leftover chicken or other meat (with plenty of black pepper). Tossing a half pound of pre-cooked pealed and tailless shrimp in with a can of chicken/sausage gumbo soup is pretty good, too - and super easy.

Grilled cheese should be toasted in a skillet with lots of butter. Are you trying to be healthy or are you just trying to avoid getting greasy fingerprints on your book?

NACHOS!

Get the best tortilla chips you can find. They have to be oily to the point they are almost translucent.

Top with favorite chili, meat and, a little catchup. Cover with favorite cheeses, the more variety the better. I like Swiss, Cheddar.

Put on some bacon bits, real or fake, Bacos, don't matter, cover with Parmesan cheese.

Add tobasco to taste. This should take less than 3-4 mins.

Bake at 350 degrees for 12-15 mins. The long, slow, cooking time makes it all meld together wonderfully. Yummy

Yessir, when I was bach'en it I lived off my crockpot and grill. Takes 10 minutes to prepare a pot roast, cook on low for 8 hours and feast. I perfected the recipe over time.
Grilled chicked, steak or fish is easy too. easy to throw together burritos, or just add some easy veggie sides.

Quick chicken marsala

Fed me and the son on this last night:

Start some rice cooking in the microwave. Mine has a "Rice" button.

Put some boneless chicken breasts between plastic wrap.
Pound 'em until 1/4" thick.
Put a half cup of flour in a plastic bag, shake the chicken in the bag until coated.
Saute in frying pan on medium heat with olive oil, turning after 2 minutes.
When done, add a jar of Trader Joe's Marsala sauce and heat till warm.
Serve over rice.

15 minutes total.

Steak, Oven Fries, or baked potato, Salad.
Oven-baked Chicken, Rice, Green Beans (now you got-leftovers)

Do at least three-five servings of green veggies, fruit per day-even if one of them is salad!

Spaghetti with pesto Genovese and grated parmesan cheese.

Baked potatoe wedges with cottage cheese - cut thoroughly washed (so you don't have to peel them) into wedges, place in a bowl, sprinkle salt, crushed black pepper, and rosemary (if you like) over the taters, add about a table-spoon of olive oil, thoroughly mix, so that all the wedges get marinated; put them in a pan and pop them into the oven for abou 45min. (oven set rather hot - around 240°C).
In the meantime, put some cottage cheese in a bowl (you can add some sour-cream and/or yoghurt, if you like), chop some chives, and add them to the cheese; if you like, you can add some garlic, ground pepper, paprika powder, herb, or whatever you like.
I have to cook dinner for my clients every day at work (I work at a group home for mentally handicapped people), and that's one of the favorite dishes - easy & quick to cook, and EVERYBODY loves it!

We have a Showtime rotisserie that works wonders. The other night, I did a chicken, marinated with a mesquite concoction; it was delicious. Very easy to prep; just set it and forget it!

I like cooking and eating good food but also like comfort food, and theres nothing better than a Fish Finger sandwich on buttered doughy white fresh crusty bread, with Ketchup - or even .. yes .. mmm salad cream (which, oddly I generally avoid like the plague at other times ;) )

And a good few drops of Tobasco for me.

Spaghetti and Meatballs with Garlic Texas Toast:
- 1 jar of Ragu or similar
- 1 bag of frozen meatballs
- 1 box spaghetti noodles
- 1 box frozen garlic texas toast (8 pcs)

- Boil your noodles and set aside.
- Start warming meatballs in skillet and dump Ragu sauce in. heat on medium until simmering.
- While sauce is warming, make the toast. I fry in a pan. about 1 min each side.
- Meal comes together perfectly in about 30-40 min.

Rice and Salmon with Soy Sauce

- Make X servings of rice.
- Open a can of Salmon, dump excess water, and stir in soysauce.
- Eat with Rice
- For an added treat, add furikake (shaved fish-seaweed) on top of rice. Very simple Asian style dish.

HotWings and Potatoe Wedges (Deep fried content)

- Make potatoe wedges - put on paper towel, dash with S&P, and garlic powder. Toss until coated with seasonings.
- Make the hotwings in fryer. Do not bread or flour the wings.
- Mix Frank's hot sauce and butter, and dump wings into bowl with sauce. Mix well.
- Break out the Bleu Cheese dressing and chow down!!!!

easy or fast? Fast is always easy, but something can be slow, but still easy.

Fast:
-leftovers. If I'm grilling, I always double it so I can keep eating good for the next 2 days.
-I admit it. Chef Boyarhee. I grew up with it. I still keep it stocked when I come home late and need dinner in less than 5 minutes. Spagettios work too. With meatballs please. If I were to grow up eating horse dung, I'm sure I would still like it.

-steak or burger on the grill. Or Brat.
-rotisserie chicken from grocery store.
-Eggs/toast/bacon/Breakfast for dinner.
-tunafish sandwiches.

Easy, but not exactly fast:
-Chili
-Chipped Beef, aka SOS
-homemade pizza, as long as a crust is ready and I have homemade sauce in the freezer.
-pasta and homemade sauce

I do that one a lot during the summer when I can walk outside and grab fresh tomatoes. Throw some sliced olives in there sometimes. Add some nice bread and a salad and you have dinner.

What I usually do is dump the pasta -- usually ziti or rigatoni -- into the big saute pan where I throw together the "sauce" and toss it with some freshly grated parmesan.

The real key is real parmesan. None of that sawdust in a can.

Another one, take a can of black beans and mash them. In a pan, saute some onion and garlic -- maybe a serrano chili or two or three -- throw in a can of diced tomatoes, the mashed beans, some chili powder and cumin and a crapload of cilantro and serve that over pasta with cheese on top.

It's really good and one of my wife's favorites.

Put chicken pieces of your choice in a casserole dish. Cover with Kraft Greek dressing. Bake for 1 hour, serve with rice, Italian bread and a salad.

Serve it to your favorite lady or man and if this doesn't get you laid, nothing will.

What I usually do is dump the pasta -- usually ziti or rigatoni -- into the big saute pan where I throw together the "sauce" and toss it with some freshly grated parmesan.

always a good idea. I've also cooked the pasta right in the sauce a few times, and liked that...got that idea from ms. rachel ray.

hey, i got another good one, as long as you don't have any sodium restrictions...I call it left over chinese food soup...

when you have leftover chinese meats and vegs but not enough rice to make a plate, try throwing them into a bowl of ramen soup of the same general meat flavor (use only half the packet that comes with the ramen unless you eventually WANT to have sodium restrictions on your diet)

I could get three meals out of one chinese food order on this in college. pretty much how i survived financially!

Dalton's Favorite:
1 lb ground beef, browned
1 can Ranch Style Beans
1 can corn
Dump all into a pot and heat it up.

Dalton's 2nd Favorite:
1lb ground beef, browned
1 large potatoe, diced.
Cook until potatoe is soft

No leftovers.
