4th of July Menu?

Here we go. Some folks are bringing some of this stuff, too...

1 rack pork ribs, cooked on the Egg
Several Chicken breasts, I'm going to marinate them, but haven't decided how
Hot dogs
My wife's homemade mac and cheese

Sounds good to me. Watermelon is an absolute must. Grilling is too. Beer is as well. I'm doing steaks. Just like I do almost every Saturday of the year. Yum. Happy 4th!

Normally its burgers and dogs, but a family member is coming in from Florida, and he claims there aint no good Mexican Food in Florida, so I'm makin Carne Asada and Chicken Al Carbon on my grill. Wife is making her delicious refried beans and Mexican rice.

Pork Tenderloin Kabobs. Marinated for 4 hours in honey, soy sauce, cilantro, and lime juice marinade. Some salt and fresh cracked pepper on it.

Red Bell Pepper and White Onion Kabobs on the grill. Salt Pepper brushed with Olive Oil.

GRILLED Pineapple Kabobs w/ honey glaze grilled till nice and sweet and caramelized crust on the outside.

And whatever else everyone at my Mom's is going to bring / cook.

But I WILL be eating well when I bring my surprise over there!

today, i'm doing yellowfin tuna steaks on the grill, marinated in lime, garlic and chili oil, served sandwich style with guacamayo (sounds like what it is, a comination of avocado, cilantro, lime, red onion and mayo and a lovely grilled red onion on the bottom.

our side will be a deconstructed baked potato, grill roasted red potatoes with bacon and onions, topped with a sour cream/ cheese sauce.

sounds fancy schmancy, i know, but i like to have fun with my cooking--and this stuff is actually really easy.

and yes, keeping with the tradition of outdoor cookin', the whole meal will be done outdoors.

This is the first time in about 7 years that I haven't had my invitational 4th of July Fireworks Jam & BBQ.

I always invite pickers and friend over to play in the park while the volunteer fire department sets off all the confiscated fireworks for the year. I always spend days smoking ribs, brisket, and pork butts, and make a big feast for all.

This year I took a road gig for the weekend. So I'm sittin' in a motel room in Blythe CA, with half of a left over dominoes pizza from yesterday.

Brats, slow cooked on the grill and turned by fingers to feel when they firm up. Simmered in warmed up beer 'n onions. Good hard Brat buns. Served with coarse ground German brown mustard. Sides are homemade old family recipe potato salad, homemade macaroni salad, homemade baked beans, deviled eggs and the best for last.... a fresh half barrel of Labatt's Blue in the kegerator.
