So... whatcha grilling this weekend?

We grilled a bunch of baby back ribs tonight, with a sides of honey beans and wild rice...

Tomorrow night it's T-bone steaks, steak fries, corn on the cob, salad with homegrown romaine, walla walla sweets and tomatos, and ice cold watermelon for desert.

*Charcoal with chunks of alder... MmmmMmmmmMmmmmmmmmmmmmmmm*

I told my wife I'd grill up her favorite this weekend. Her favorite is my special Honey Grilled Chicken and to go along with it, I'll grill up some corn on the cobb. Probably some Mashed Potatoes too.

Last night a buddy brought over marinated deer steaks that I grilled and we ate on sandwiches. I really havent cooked or eaten deer before and it was really good. I took some foil and made a big pouch and put in some baby red potatoes, olive oil, salt, fresh cracked black pepper, and crushed garlic from the garden in it. Sealed it up and grilled them until they were nice and soft. Wasnt expecting the deer steaks so I also had to grill up a nice thick New York strip that I already had out and seasoned up. Going to use that for fajitas for lunch today. We drank beer and threw horse shoes and ate our fill. Good times!

Last weekend it was smoked pork spare ribs. This weekend it's fresh salmon grilled over alder wood.

Wednesday my teenage son marinated (balsamic, rosemary, olive oil) & grilled steaks to perfection

Thursday night it was lemon chicken, masala chicken with homemade mint raita, fresh corn.

Later today it is shrimp scampi skewers and masala chicken again (I made too much raita)

3 racks of spareribs. Slow smoked over a post oak fire. No sauce, just a dry rub on em.

We had Rib-eyes last night - about a pound and a half each. I know that is going to kill me one day, but nothing beats a nice medium rare steak!

Women's Magazines are good for something!

Barbecued Baby Octopus with a Citrus and Chilli Dressing.

800gm baby octopus
1 bunch Italian parsley (chopped)
3 lemons
2 limes
2 oranges
2 cloves of Garlic
3 red chillies
100 ml olive oil
100 ml sweet chilli sauce

For the marinade take the stalks from the parsley, finely chopped garlic, juice from one lemon and ½ of the olive oil. Combine all in a bowl. Clean the octopus by removing the ink sack from the head and the beak from the base of the head. (If you have a great relationship with your fishmonger they may already have done this for you)
Toss the octopus through the marinade, cover and refrigerate for up to 24 hours (if possible) This allows the flavors of the garlic and lemon to enter the flesh of the octopus as well as tenderizing.

On the day of cooking segment the remaining citrus fruit reserving the juice.
Take the juice, sweet chilli sauce and the remaining olive oil and whisk together. The amount of chilli sauce will vary according to individual taste so don't add it all straight away.
Throw in chopped coriander and season with fresh ground black pepper.
Sear the octopus on the BBQ until just cooked, toss the octopus in a little of the dressing and arrange in the center of the plates. Toss the citrus segments throughout the remainder of the dressing and drizzle over and around the plate.
Garnish with parsley.

BTW - no one here throws a couple of shrimp on the barbie! We call them prawns! And often we throw a couple of Tuna steaks on the barbie for 30 seconds a side. Like this...

Ahhhhhhhhhhhhhhhhhhh....... :)

Well, the grilling went without a hitch and I'm sitting back in my workstation chair, rubbing my belly.

We had a slight change of plans and grilled a couple of beautiful NY strip steaks tonight (over alder and cherry wood), with a bunch of fresh green beans and our first homegrown heirloom tomato of the season.

We drove up the Columbia River highway this morning to a little Oregon town called Mosier to pick some fresh cherries. Some of the finest cherries in the world come from this place. After spending a half hour at Roots farm, we came home with 26 pounds of bings and rainiers. Some of which made their way into a pie that Mrs. Klash made from scratch, and a bunch more found their way into a few fresh cherry margaritas.

Think I'll go downstairs and see if the pie is cool enough to cut...

You know, Kid; I could have gone all night without that mental image!!!!!!

Tomorrow night is either porterhouse or ribeye with hamburgers or dogs (preferably Chihuahua's or any other mutt under 50lbs).
